This sandwich is easy to shop for with ingredients that are readily available in any grocery store and may already be in your pantry.  It quickly comes together in a minimum amount of time. And bonus! It is so good, whether you stick to the basic ingredients or decide to go all fancy and add some additional things.

1 can White beans, rinsed and drained*

1-2 TBSP Dijon mustard

1-2 TBSP vegan horseradish 

2 slices toasted whole-grain bread for each sandwich

1-2 TBSP. apple butter

A sprinkle of cinnamon and cayenne

Sriracha 

Tomato slices

Thinly sliced red onions

Shredded lettuce

Mash the white beans, mustard and horseradish into a thick paste. Adjust to taste.

Spread both slices of your toast bread with apple butter, and a sprinkle of cinnamon, and if you are feeling adventurous, a little cayenne as well. Top one slice with the bean mixture.

Top the bean mixture with sriracha to your taste, then add the tomato  and onion slices and the lettuce. Makes about 3-4 sandwiches.

Be adventurous—add sprouts, radish slices, chopped artichoke hearts or diced bells in your choice of color. Or caramelized onions. Maybe a few chopped Kalamata olives or capers.

On a fancy bun or a plain ol’ hamburger bun. This sandwich can be as much or as little as you want it to be. Just the basics or a sandwich with jazz.

*If you live close to a Whole Foods store, try their Gigante Beans with garlic and parsley. You will find them in the salad bar.

These are my personal favorite for this recipe. By the way, this spread is also delish as a dip. Try it with crudites, bread sticks, crackers, or toasted French bread slices.
